Our Story

We have been making cheese kits since 2011. Tens of thousands of them, from a small family business in the UK, and in that time we learned one thing above everything else: a recipe that "mostly works" is not good enough.

Cheesemaking is chemistry you can eat. Milk, warmth, an enzyme, a little salt. When the temperatures are right and the steps are clear, it works every single time, and it feels like magic even though it is science. When a recipe is vague, it fails, and someone's Saturday afternoon is ruined along with two litres of milk.

So we became obsessive about testing. Every recipe in every Cheese Lab kit has been made over and over in an ordinary kitchen, with ordinary supermarket milk, on an ordinary hob, until it works first time for someone who has never made cheese before. If a step can be misread, we rewrite it. If a temperature range is too wide, we narrow it. That is the whole idea of The Cheese Lab: treat every recipe like an experiment, keep what proves itself, and throw out the rest.

Three kits came out of that process. The Starter Series for first experiments. The Signature Series for the full tour, halloumi included. The Full System for people who want the complete education, forty recipes deep. Every one uses vegetarian rennet, and every one is guaranteed to work.
