Mozzarella troubleshooting: why it will not stretch and how to fix it

Mozzarella refuses to stretch when the curd is either too cool, too hot, or at the wrong acidity. The good news: curd is forgiving, and most "failed" mozzarella can be rescued by adjusting the water temperature and trying again.

The science of the stretch

Stretching works because warm casein proteins slide past each other like strands of warm toffee. That only happens in a narrow window: the curd needs to reach roughly 60 to 70C in its hot water bath, and its acidity needs to be in the right range for the proteins to be flexible rather than brittle.

Diagnose your curd

  • It tears instead of stretching: too cool. Return it to the hot water for another minute, then try again with gentle pulls.
  • It dissolves into the water: too hot, or worked too roughly. Let the water cool slightly and handle the curd with more patience, folding rather than pulling.
  • It is rubbery and tight: acidity is off, usually from rushing the earlier steps. Give the curd a rest, keep the water at temperature, and work it in short sessions.

The rescue routine

Reheat your water to about 70C. Cut the curd into smaller pieces so they warm evenly. Submerge for 60 to 90 seconds, then lift with a spoon and fold the curd over itself. When it starts to look glossy and pliable, pull gently. Glossy and smooth means you have arrived: shape it into a ball, drop it into cool water to set, and admire your work.
